Cochinita is a traditional Yucatec Mayan dish of slow-roasted pork, originating from the Yucatán Peninsula in Mexico. "Cochinita" means "little pig," and "pibil" refers to the Mayan method of cooking in an underground pit, though modern versions can be prepared in a slow cooker or oven.

CARNE AL PASTOR
"Carne al pastor" means "shepherd style meat" in Spanish and refers to marinated, spit-roasted pork. The cooking method was introduced to Mexico by Lebanese immigrants and adapted with Mexican ingredients.
A piece of pineapple is often placed on top of the trompo, and a slice is traditionally added to the taco.
